East Indian Sounds and Smells

My neighbors don't know what to make of me. On this particular Monday night, in a 1978 Airstream trailer, in a RV park in Elko, Nevada:

Zakir Hussain, Shivkumar Sharma, John McLaughlin on the stereo to set the mood.

Boil 10 cups water, 2 cups mung beans
After 20 minutes, add 1 cup brown rice
After 30 minutes, add:
2 medium white onions, chopped
1 entire bulb of garlic, chopped
6 roma tomatoes, chopped
6 serrano chile peppers, chopped
1 heaping Tablespoon of garam masala
1 heaping Tablespoon of ground coriander
1 heaping Tablespoon of ground curry powder
1 Tablespoon of ground cayenne pepper
2 Tablespoon kosher salt
1 teaspoon black pepper.

After 40 minutes, turn off heat and add 6 tablespoons of tamari.
Let stand for 10-30 minutes.
Serve in a big bowl and top with chopped fresh avocado and maybe chopped green onion and fresh cilantro if you are so inclined.
